For people on vacation?
If you are on vacation in Japan it might be difficult to find and join a team sport, but there are places that have adapted skiing like at Fujimi Kogen – https://fujimikogen-ski.jp/rental-school/monoski.html
There are some places that offer accessible diving like ZeroGravity in Amami Oshima – https://zerogravity.jp/concept_en.php
I know that @Momijihonyaku also did accessible golf here in Japan too.
