We want to get the train from Haneda to Higashi-Ginza and on google maps it shows this (picture) – continue on the same vehicle. How do you know when getting on in Haneda that you are on the correct train to be able to do this?

From Haneda Airport Station, you can take the “Keikyu Line” to Higashi-Ginza, but as you mentioned, some trains only go part of the way, and others go in a different direction. (Be sure NOT to board a train “bound for Yokohama”.)
The safest option is to ask a station staff member or a nearby passenger.
