As a Parisian (but not French), I will take this. There are indeed wheelchair-accessible cruises in Paris, took one myself a couple of years ago – I believe it was with Bateaux Mouches. I would also recommend checking on boat rental platforms (eg Click&Boat, think they are Paris-based) for a daily boat rental. Local speedboats and RIBs often come with a skipper who can help with anything you need and probably serve as a guide as well. Parisians are proud of their city! Enjoy your trip!<br>
